Bought some fresh mussels at a farmer’s market today! I have a great recipe, but was out of many of the ingredients. I instead used what I had to cook them. Coconut oil, onions, freshly ground coriander and cumin, a little mild red pepper, ginger mead instead of white wine, lemon juice, cilantro, and coconut milk. Added some leftover basmati rice instead of using bread. So yummy!
